Kosher environment

The process of kosher certification has been radically affected by deep changes in the food industry and by the fact that more than 80% of the products offered by the industry contains pre-processed ingredients that contains often products that are not allowed. When you order some food from Fabienne, you can be guaranteed that it is home made, delicious, and strictly kosher.

Home cooking by Fabienne follows all the kosher dietary rules, and all products used in Fabienne’s kitchen are suitable to anybody who eats kosher. Fabienne always uses the most recent kosher guides in case of doubt when she buys any ingredient.

Fabienne can also come to your house, as your personal chef, to prepare any home cooked food, for any occasion, everyday food, Shabbat or festivals, parties, to suit your specific religious requirement.

Meat and its derivatives

The meat used is bought from kosher butchers in North West London.

Dairy products and their derivatives

As milk and pure butter are permitted when they derive from kosher animals, Fabienne uses products from the supermarket. Only kosher cheeses bought in kosher shops are used for cooking.

The prohibition of combining meat and milk

The Torah says: "You may not cook a young animal in the milk of its mother". From this, it is derived that milk and meat products may not be mixed together. Not only may they not be cooked together, but they may not be served together on the same table and surely not eaten at the same time. Fabienne’s kitchen follows this rule scrupulously even in the handling of utensils, which are carefully separated into “fleishig” (meat) and “milchig” (dairy) and separately labeled. Fabienne has two sets of plates, cutlery, pans and pots. Fabienne has two separate sinks, two ovens (one used for milk, one for meat), and two separate dishwashers.

Eggs

The eggs used in Fabienne’s kitchen are most of the time bought in kosher shops or kosher butchers; the white eggs do not contain blood. If Fabienne uses free range eggs, they are individually examined.

Fish

In the Jewish religion, only fish with fins and scales may be eaten, for instance, tuna, salmon and herring. Shellfish such as shrimps, crabs, mussels, and lobsters are forbidden and are not used in Fabienne’s kitchen.

Fruits, vegetables, cereals

All products that grow in the soil or on plants, bushes, or trees are kosher. However, all insects and animals that have many legs or very short legs are not kosher. Consequently, vegetables, fruits and other products infested with such insects must be checked and the insects removed. Vegetables prone to insect infestation (e.g. cauliflower) are carefully examined by Fabienne, or are used frozen.

Kosher Wine

Most of Fabienne’s recipes do not contain any alcohol. Only kosher wines and other alcohol are used and consumed in Fabienne’s kitchen.
